Pocket Sandwiches to Go

I love and enjoy these pocket sandwiches, it is a meal to go and can be eaten at any time of the day, for breakfast, lunch, and dinner. Also, it can be used as a snack or even a school lunch for kids. You can make large quantities cover with plastic wrap and place it in the freezer, just heated up an oven toaster or oven. Very nice recipe for working mothers healthy, fast and convenient meals at any time. You can also change the recipe and add your favorite meat and vegetables to make it as you like. The most important part of this recipe is to perfect the dough the rest of the recipe is very simple to make.  

 

Total: 2 hours and 15 minutes

Prep:  Hour for the dough 45 minutes for the stuffing.

Cook: 20 to 30 minutes

Yield: 6 to 7 servings

Level: Easy

  

 

Ingredient for the Dough:

   

  • 4 cups white flour 

  • 2 cups of warm water 

  • 2 teaspoons yeasts 

  • 1 tablespoon sugars 

  • 1 tablespoon salts 

  • 7 tablespoon olive oil 

 

Instruction for the Dough:

In a bowl add 1 cup of warm water 105F-115F degrees add the yeasts, sugar and leave it for 3 to 4 minutes to rise.

In another bowl add the white flour, olive oil, salt, 1 cup warm water and add the yeasts. Mix the ingredient well and knead the dough.

In the bottom of the bowl add ½ tablespoon of olive oil then add the knead dough on top, cover and let it rest for 30 minutes.

Cut dough into 10 to 12 pieces round shape and let it rise for about 10 to 15 minutes place it on dusted flour bed.  Take one of the dough pieces flatted it with a rolled pin into circle shape.

 

Ingredient for the Ground Beef Stuffing:

  • 2 cups of cooked rice (option)

  • 1 1b ground beef

  • 1 large onion chopped

  • 3 tablespoon olive oil

  • 2 cups peas

  • ½ cup tomatoes paste

  • ½ cup of water

  • Salt as preferred

  • 1 tablespoon cumin

  • 1 tablespoon black pepper 

  • 1 tablespoon paprika

  • ½ tablespoon nutmeg

  • 1 tablespoon coriander

  • 2 cups mint 

  • 2 cups Mozzarella cheese

  • Eggs (option)

Instruction for the Ground Beef Stuffing:

In a large pan add the ground beef and fully cook it,

Add the olive oil and the onion cook until the onion is tender

Add the peas and cook for 4 to 5 minutes.

Add the tomatoes paste and water let it boil.

Add the salt, cumin, black pepper, paprika, nutmeg, and coriander

Lower the heat and cover and let it simmer for 6 to 7 minutes until there is no water left.

Let it cool down before placing it on the dough

With dusted flour bed, take one of the dough pieces flatted it with a rolled pin into a circle shape.

Add the rice (option)

Add the ground beef stuffing

Add mint and Mozella cheese

Take the ends of each side of the dough and bring them together to make a pocket. Put it in a cookie sheet and place in a heated oven of 400 degrees for about 15 minutes or until golden brown. Take out then add a cracked egg on top return in the oven for about 5 minutes until the egg is cooked

 

Ingredient for the Chicken Stuffing:

  • 2 cups of cooked rice (option)

  • 1 breast chicken cut into small pieces

  • ½ cup of water

  • 1 large onion chopped

  • 1 large green pepper

  • 6 tablespoon olive oil

  • ½ cup tomatoes paste

  • ½ cup of water

  • Salt as preferred

  • 1 tablespoon cumin

  • 1 tablespoon black pepper 

  • 1 tablespoon paprika

  • ½ tablespoon nutmeg

  • 1 tablespoon coriander

  • 2 cups mint 

  • 2 cups Mozzarella cheese

  • Eggs (option)

Add the green pepper cook for 4 to 5 minutes.
