I love this recipe; it is very healthy and easy to make; you have all the goodness in one big bowl. You have your protein the chicken, you have your carbohydrates the macaroni. And you have your vegetables, tomatoes, pepper, black bean, lettuce and cilantro. I make my own dressing which is garlic, ginger, hot pepper, and sun dried tomatoes all crushed together then I add vinegar, olive oil, lemon juice and salt. I usually make a big bowl and there will always be left over, my children would eat it as a night snack or they take it for lunch the next day. I am not a macaroni person, but I love to eat this dish at any time.
1 ½ package of your favorite Macaroni
2 cups cilantros
½ head lectures
1 big green pepper
1 whole cooked chicken
1 15.5 oz. can black bean.
2 cups of cauliflower
Water as need it
Ingredient for the dressing
5 clove garlic crushed
½ long pepper crushed
2 tablespoons fresh ginger crushed
2 sun dried tomatoes crushed
¼ cup of vinegar
1 tablespoon black pepper
1 tablespoon nutmeg
1 lemon juice
¼ cup olive oil
Salt as preferred
Bring 4 quarts of water to a rapid boil add the macaroni and salt, cook uncovered, stirring frequently for 11 minutes or until tender, drain and let it cool.
Put the chicken in a big pot, then add water to fill the pot, add the salt, black pepper, and cumin for in hour to hour half until the chicken is fully cooked. Take the chicken out from the pot let cool, then Shred the chicken with your fingers as you pick it off the bone. Then you can chop the chicken into smaller pieces if you like.
Put the macaroni in a big bowl then add the cooked chicken, cilantro, tomatoes, lectures, green pepper, black bean and cauliflower.
The dressing of the Macaroni mix
Garlic, long pepper, ginger, dried tomatoes crashed all together, then add vinegar, black pepper, nutmeg, lemon juice, olive oil
Add the addressing to the macaroni mix and mix very well.
You can serve this dish as a side dish, you can add baked chicken and couscous on the side to make a delicious full meal.
