Chicken & Eggplant with Sauce
I love eggplant in any dish, this recipe is layers of goodness, it has your vegetables and your protein the chicken, it is a full meal in one dish. For the sauce, if you do not have all the ingredient, you can easily make your own sauce. All you need butter, flour, plain yogurt and your favorite spices. This recipe is easy and simple to cook and you can turn it to your own recipe by adding your favorite vegetables and spices. You can eat this dish just as is or you can eat it on the top of the basmati rice or spaghetti.
Some fun fact about Eggplant, there is a Male and Female eggplant astonishingly! You can tell the different between male and female eggplant by looking at the bottom of the eggplant, there is long slit it’s a female, and if it is circular then it’s a male. The female eggplant has more seeds and it is bitter in taste. The male eggplant has less seeds and not as bitter.
The best way to cook the male and female eggplant and remove the bitter taste in the female eggplant is by lightly salt it, black pepper, cumin, nutmeg and garam masala and rub it to the eggplant well and leave it for about 4 to 5 minute before you cook it.
3 potatoes skinned and cut round shape
1 whole chicken breast cut 1/4-inch-thick cutlets.
1 eggplant cut round with skin or without skin.
Salt preferred taste
3 tablespoon cumin
3 tablespoon nutmeg
3 tablespoon black pepper
3 tablespoon garam masala
1 cup of corn oil
3 tablespoon olive oil
3 tablespoon of butter or corn oil
¼ cup of flour
½ cup water
½ long hot pepper chopped
½ cup yogurt or ½ cup ranch dressing
6 tablespoon of soy sauce
6 tablespoon steak and chop marinade
1 tablespoon black pepper
1 tablespoon cumin.
1 tablespoon garam masala
¼ cup of cilantro
In deep dish cut the potatoes in round shape add salt, 1 tablespoon cumin, 1 tablespoon nutmeg, 1 tablespoon black pepper and 1 tablespoon garam masala.
In cookie sheet add olive oil, add the chicken, salt, 1 tablespoon cumin, 1 tablespoon nutmeg, 1 tablespoon black pepper and 1 tablespoon garam masala. Heat the oven to 400 degree and let it cook for about 30 minute or until the chicken is fully cooked. Than added to the potatoes.
In the frying pan add the corn oil on medium heat, cut the eggplant round shape and add salt, 1 tablespoon cumin, 1 tablespoon nutmeg, 1 tablespoon black pepper and 1 tablespoon garam masala. Than fry the eggplant until they are brown and add it to the chicken and the potatoes.
Instruction for the sauce.
In deep pan medium heat add the butter and flour mix well, then add ½ cup water mix well. Add yogurt or ranch dressing, soy sauce, steak and chop marinade, black pepper, cumin, garam masala, and long hot pepper. NO SALT needed because the soy sauce is salty.
Mix well and let it cook until boils, then pour it over the potatoes, chicken and eggplant, then add the cilantro on top. Put in 400-degree heated oven for about 12 to 15 minute or until the sauce thicken.
