This Aqras Allahm Almafrum (Circle Minced Meat) can be eaten at any time of the day. This Recipe is made with dough stuffed with ground beef, onion, parsley, and cilantro. You can make large quantities, put in a freezer and take them out at any time you want to eat them. You can put them in a toaster oven to heat them up, or in oven or microwave for a few minutes and they would taste as fresh as you took them out of the oven for the first time. Many Iraqi homes eat them during dinner time and with Iraqi tea. Aqras Allahm Almafrum (Circle Minced Meat Pie) is very a diverse dish, it can make an excellent breakfast, snack, side dish, and an appetizer to serve and eat.
The basic dough recipe is 2 cups of flour, 1 cup of warm water, 1 teaspoon yeasts, 1 teaspoon sugar, 3 to 4 tablespoon olive oil. You can double your recipe and make large quantities for parties or just put them in the freezer to be eaten at any time.
4 cups white flour
2 cups of warm water
2 teaspoons yeasts
1 tablespoon sugars
1 tablespoon salts
7 tablespoon olive oil
In a bowl add 1 cup of warm water add the yeasts and the sugar and leave it for 3 to 4 minutes to rise.
In another bowl add the white flour, olive oil, salt, 1 cup warm water and add the yeasts mix. Mix the ingredient well and knead the dough.
In the bottom of the bowl add a ½ tablespoon of olive oil then add the knead dough on top, cover and let it rest for 30 minutes.
Cut dough into 10 to 12 pieces of round shape and let it rise for about 10 to 15 minutes.
Ingredients for the ground beef mix
2 Ibs pounds ground lean beef
3 medium onions finely chopped
2 tablespoons olive oil
1 cup chopped parsley
1 cup chopped cilantro
2 teaspoons cumin
Salt as preferred
1 tablespoon black pepper
1 tablespoon allspice
¼ teaspoon chili pepper
Instruction for the ground beef mix
In skillet, adds meat, onions and olive oil to fully cooked then add the parsley, cilantro, cumin, black pepper, allspice, and chili pepper mix well for about 3 to 4 minutes.
Take one of the dough pieces to flatten it with a rolling pin in a circle shape add your cooked meat on the edge of the dough and rolled it all the way to the end of the dough.
Start to twist your dough into a circle shape. Then flatten the dough with a rolling pin into around circle shape and glaze the dough with egg wash.
Put it in a greased cookie sheet in the heated oven of 400 degrees for about 20 minutes or until its golden brown.
