Chicken Kabab Wrap
Chicken Kabab wrap is a very light and healthy meal. It is a delightful recipe; the chicken Kabab is wrapped up in a dough and baked in the oven. The aroma of the chicken kabab and the bread is heavenly, especially when it just comes out of the oven and the taste is delicious together. I plated this dish as follow, I made hummus with tahini (check the recipe on this website) and spread it on the plate. I cut the wrapped chicken into ½ inch pieces and placed it over the hummus then I add my favorite vegetables on top, cucumber, tomatoes, olives, green pepper, then a dash of olive oil and sumac on top.
Ingredient: for the dough
4 cups white flour
2 cups of warm water
2 teaspoons yeasts
1 tablespoon sugars
1 tablespoon salts
5 tablespoon olive oil
Instruction: for making the dough
In a bowl add 1 cup of warm water 105F-115F degrees add the yeasts, sugar and leave it for 3 to 4 minutes to rise.
In another bowl add the white flour, olive oil, salt, 1 cup warm water and add the yeasts mix. Mix the ingredient well and knead the dough.
In the bottom of the bowl add ½ tablespoon of olive oil then add the knead dough on top, cover and let it rest for 30 minutes.
Cut dough into 10 to 12 pieces round shape and let it rise for about 10 to 15 minutes.
Ingredient: for the chicken kabab
3 lbs. breast chicken or 2 whole breast chicken
2 cups cilantro
2 cups green onion
2 cups parsley
5 clove garlic
1 hot pepper
2 cups oatmeal
3 tablespoon ginger
2 tablespoon Cumin
2 Tablespoon black pepper
1 tablespoon coriander
1 tablespoon nutmeg
1 tablespoon garam masala
2 tablespoon balsamic vinegar
2 tablespoon hots sauce
Salt as preferred
Instruction: for the chicken Kabab
Cut the chicken breast into 2-inch pieces with a knife
Take the cut chicken pieces inside the food processor bowl by having the steel blade to be chopped.
Full the food processor 1/2 full of the chicken pieces.
Run the food processor continuously for 2 minutes or until the chicken is fully grounded.
Take the ground meat out of the food processor into a bowl and repeat the process until all the chicken is done.
Add the cilantro, green onion, parsley, garlic, ginger, and hot pepper in the food process let it run for 2 minutes or until all the ingredient is blended together, then add it to ground chicken and mix well.
Add the oatmeal, Cumin, black pepper, coriander, nutmeg, garam masala and salt to the chicken mix, then add balsamic vinegar, and hot sauce, mix well.
To make kabab, take small amounts of kabab mix and shape them into cylinders shapes, you can use a skewer to build you cylinders shapes by squeezing the mix into skewer to build your chicken kabab. forming a 4-inch long shape on each skewer.
Place them on baking sheet. Heat the oven to 400 degrees. Place the chicken kabab into the oven for 20 minutes or until is done.
Making of the chicken wrap
Take of one of the dough pieces flatted it with a rolled pin into circle shape, take one of the cooled down cooked chicken kababs and place it on the edge of the flatted dough then wrap the dough around the chicken kabab then place on cooking sheet. Repeat the process until all the dough pieces and the chicken kabab are done. Brush the top of the dough with egg wash. Bake in a heated oven of 400 degrees for about 20 to 30 minutes or until golden.
