Grilled chicken & Stuffed Squash and Peppers.
Grilled chicken, Stuffed squash, green pepper red pepper and tomatoes. Served with basmati rice.
Ingredients for the grilled chicken
1 whole chicken Cut into 2 halves
3 tablespoons vinegar
Salt as preferred
1 tablespoons cumin powder
1 tablespoons coriander powder
1 tablespoon black pepper
1 tablespoon sumac
3 Glove of garlic crushed
2 tablespoon ginger
1/2 cup Yogurt
Cut slits into the chicken about ½ inch apart but don’t cut all the way through. about 70% of the way down
Rub the chicken with vinegar and salt
Add cumin powder, Coriander powder, black pepper, Sumac, crushed garlic and ginger, and half a cup of yogurt mix well and set aside for 30 minutes.
Ingredients for the veg stuffing
3 medium size squash (are hollowed out using a vegetable corer or small tea spoon)
1 medium size red Pepper (hollowed)
1 green Pepper (hollowed)
1 tomatoes (hollowed)
1/2 Ib Ground beef
1/4 cup rice Soaked in water for 30 minutes then drain.
1/2 cup Parsley Chopped
1/2 cup Cilantros Chopped
1/2 cup Green onions Chopped
1/2 Cup Tomato paste
Salt as preferred
1/2 tablespoons cumin powder
1/2 tablespoons coriander powder
1/2 tablespoon black pepper
7 tablespoon Olive oil
Foil as needed
Instruction for the stuffed veg
In a large bowl add the ground beef, rice, parsley, cilantro, green onions, tomatoes, cumin powder, coriander powder, black pepper, and 3 tablespoons Olive oil. Mix well
Take The squash, red pepper, green pepper, tomatoes, and And stuff them with the stuffing mixture
Cutting the foil That would Cover completely the squash, the tomatoes, red pepper, and green pepper.
Grease your foil place vegetable inside the foil and greased the vegetable then folded Tightly
Heat up the grill to 450 Fahrenheit and place The chicken and vegetables on The Grill for about 15 minutes then lower the heat to 350
Fahrenheit and let it cook for about 40 minutes or until it’s done.
