Kabab Maqley (Fried Kabab): Ground beef mixed with herbs and spices.

Kabab Maqley is typical tradition Iraqi dish, I have not seen any nationality cook this dish. It is such an easy dish to make and it is very delicious, it can be also a vegetarian dish by removing the beef form the ingredients, the dish will still taste as good as the beef mixture. Kabab Maqley can be used as in appetizer dish or you can make it into a sandwich, in a pita bread or French bread by adding mint, tomatoes, cucumber, and lettuce. Also, it can be used as a side dish with the chicken kabab, Amba salad, and Iraqi black tea is a must.   

When I was a child, my mom cooked Kabab Maqley often and she usually cooked it for dinner and we would eat it as sandwich. I love this dish, because it always reminded me of my mother and my childhood.  You can cook this dish in less than 30 minute very easy to make and very delicious. You can make the kabab Maqley mixture and put it in the refrigerator and you can fry it at any time, it is in excellent dish for working mothers.  

 

Ingredients:

  • 1 1b of ground beef

  •  1 teaspoon cumin

  • 1-3/4 teaspoons salt or perfered taste

  • 1 teaspoon Coriander

  • 1 teaspoon black pepper

  • 1 teaspoon allspice

  • 1 teaspoon of nutmeg

  • ¼ cup basely finely chopped

  • ¼ cup green onion finely chopped

  • 2 medium size tomatoes finely chopped

  • 1 small size red onion finely chopped

  • ¼ cup cilantros finely chopped

  • 1 ½ cup of floor

  • ¼ cup of water

  • 2 cup of corn oil

 

 

Instruction:

  • In a medium bowl combine all the above ingredients together except the corn oil and mix with hands add water as needed to combine all the ingredients together.  

 

 

  •  When all the ingredients are mixed together, it will be like a doug. 

 

  • In a medium size pan put the 2 cup of oil. Let the oil heat for about 1 minute then start to add the Kabab. Wet your hand with water than take small size ball of the kabab dough, first roll it then flatted and put it in the pan of hot oil. (Every time you are dealing with the kabab dough you need to wet your hand). Then flap it on the other side as it become brown. Remove when it became brown color.
